GHS CULINARY STUDENTS BACK IN THE KITCHEN

The COVID-19 pandemic has not stopped Granbury High School culinary students, who are back in the commercial kitchen as part of the Granbury ISD career and technical education program.
“We are very excited to be in the kitchen and creating a somewhat normal school year,” commented Langdon. “Even with our students missing part of the spring semester, they have come in and really done a great job getting the kitchen very clean, learning new processes, and trying new skills.”
Culinary is part of the CTE program for hospitality and tourism. Courses include beginning introductory and principles classes followed by upper-level offerings that expand on food preparation and menu planning to include restaurant management as well as safety and sanitation.
First-year classes recently experienced their first cooking lab, learning about new knife skills including chiffonade and diagonal cuts. The course also emphasizes the principles of planning, organizing, staffing, directing, and controlling the management of a variety of food service operations.
Meanwhile, practicum-level students made chicken fettuccine alfredo. Langdon lauded the class for making the homemade dish from scratch – everything from the pasta to the sauce.
The Galley bistro, a popular new addition to the high school with the CTE expansion from the district’s 2013 bond initiative, will open soon for take-out meals for staff only. Meals for the public are on hold due to school safety protocols.
